Yangshuo Lotus Leaf Duck

Yangshuo Lotus Leaf Duck, also called "He Ye Ya" by Yangshuo people, is one of the most traditional local dishes in Yangshuo. To prepare this dish requires many ingredients: fat and fresh duck, dried lotus leaves, cooked winter bamboo shoots, preserved ham, fried eggplant and dried shrimps. First, fry the duck with oil till the surface turns yellow; cut the raw materials into pieces stirred with salt, MSG (optional) and soy sauce, and then stuff them into the cleaned & prepared duck. Finally, wrap it with lotus leaves, put it into the bamboo steamer and cook it well. The main feature of this dish is that the duck is fat but not greasy with lots of filling. According to Yangshuo tradition, this dish has medicinal properties to nourish the stomach, reduce cholesterol and prevent cancer.
